Pumpkin Pie No Bake, No Oils

Ingredients

Crust

  • 12 pitted dates
  • 2/3 cup macadamia nuts
  • 1/3 cup cacao nibs
  • 2 tbsp vanilla
  • 2 tbsp cane syrup or molasses

Filling

  • 15oz can pumpkin
  • 1/2 cup chia seeds
  • 1/2 cup plant milk
  • 2 tbsp vanilla
  • 2 tbsp cane syrup or molasses
  • 1/2 tsp pumpkin pie spice
  • dash nutmeg
  • dash ginger

Instructions

  1. Put crust ingredients in food processor and process till crumbled and well incorporated. Place crust blend into pie pan and press down to form crust.


    Place filling ingredients in mixing bowl and mix well by hand and pour into prepared crust. Chill for 1 hour in freezer and serve. Best kept in freezer and let sit for 3 mins before serving afterwards.
