This is a delicious Indian dish. Mine tastes as good as any dish I get from an Indian restaurant. Spicy, earthy and 100% Whole Foods Plant Based compliant. You can substitute any veggies or greens you like or have on hand in this amazing dish. Serve up some roti , naan or pita and you are good to go. I like to make several servings and freeze to those nights I want a quick dinner. Let’s go !

Hariyali Vegetables

Minty, tangy and spicy goodness. Great way to serve up some veggies and flavor

  • 1 onion chopped
  • 5 cloves fresh chopped garlic
  • 2 inches fresh grated ginger
  • 4 fresh dried red peppers
  • 2 tbsp white miso paste
  • 1 bunch cilantro
  • 2 cups boiled potatoes
  • 1 cup boiled carrots
  • 1/2 head cauliflower
  • 1 tbsp garam masala
  • 1 tsp tumeric
  • 1 tbsp red Indian chili powder
  • 1 15oz can peas
  • 1 15oz can green beans
  • 1 cup almond milk
  • 1/2 cup pistachios, peanuts or cashews
  • 2 cups veggie broth

Hariyali Paste

  • 1 cup fresh basil
  • 1 cup fresh mint
  • 1 bunch fresh spinach
  • 10 curry leaves
  • 1 tbsp fenugreek leaves
  • 2 cups veggie broth
  1. Chop potatoes and carrots to bite size and place in large pot and boil for 5-8 minutes till almost done. Add cauliflower and boil for 2 minutes and drain.

Hariyali paste

  1. Place, chopped spinach, basil, mint, cilantro, curry leaves and fenugreek in blender with 1 cup of veggie broth and blend. Stop frequently to mix up and add veggie broth as needed to make a slightly thin paste

  2. Place chopped & diced onions, garlic and ginger in pan. Add enough veggie broth to keep wet as you cook. Add chopped red peppers. Saute till translucent, adding miso paste at the end. Mix well.

  3. Place boiled potatoes, carrots and cauliflower back in large pot and add sauteed onions, garlic & ginger. Pour Hariyali paste on top. Add peas and green beans. Bring to a simmer and add spices. Simmer for 20 minutes and serve.
